Ingredients :

2.5kg duck

green beans, chopped

red capsicums (peppers), cut in strips

mango, peeled and chopped

shelled macadamia nuts

225g can lychees, halved

olive oil

lemon juice

freshly ground pepper

Method :

  1. Wash and dry duck.
  2. Season inside and out with pepper.
  3. Prick the skin with a fork to drain off fat during cooking.
  4. Truss and place on a rack in a roasting dish.
  5. Bake in a moderate oven 180oC (350oF) for 2 h ours or until tender and cooked when tested.
  6. Drain fat from pan as necessary.
  7. Remove duck from oven, remove string.
  8. Return to oven for 10 minutes.
  9. Take out and allow to cool.
  10. Remove meat, discarding skin fat and bones.
  11. Cut into bite-sized pieces, set aside.
  12. Drop beans into boiling water.
  13. Reduce heat and simmer uncovered, for 4 minutes, drain well.
  14. Rinse under cold, running water, drain again.
  15. Blanch capsicums in boiling water.
  16. Drain and refresh under cold running water, drain again.
  17. Just before serving, combine all ingredients in a bowl.
  18. Toss until well mixed.
  19. Serve at room temperature.
